What to Expect on the Day of your Event

  

OVEN SET-UP 

Wander Wood-Fired arrives at least 3 hours before your event begins. The first vehicle to arrive is a full sized pick-up truck towing our pizza oven. This vehicle needs clear access to the location where we will cook for your event. Once we are able to get the oven and equipment unloaded, the truck can be moved to a location out-of-sight if desired.

We immediately get a large fire started in the oven to achieve our cooking temperature of between 800 to 1000º. This causes some degree of smoke in the area around the oven.  The “smoke” phase usually lasts about 45 minutes until a large bed of coals is formed. After that, smoke is minimal for the remainder of the event.  

We will also set up a 12x12 white tent for prep beside the oven with three tables beneath. 

BUFFET SET-UP 

A second vehicle with support staff will arrive about one hour before your service time.  Please have a parking spot available with easy access to the event.  

When additional staff arrive, the buffet table will be set-up with linens, plates, flowers, serving boards, etc. We are happy to work with you to decorate the table with personal touches should you choose. Please make sure there is space for our staff to access the table.

SERVICE DETAILS 

The first round of pizzas are prepared 20 minutes before your service begins. This allows us to have at least 20 pizzas ready for the beginning of your service. We continue to cook pizzas at a rate of 4-5 every 3 minutes during service. We try our best to keep every pizza style fully stocked throughout buffet service. 

We have 10-12 pizzas on the buffet table at a time (up to 5 unique topping  combinations). Small signs identify each kind of pizza. 

Although we can cook 75-100 pizzas per hour, you should expect dinner service for events over 100 people to take at least 1.5 hours for everyone to have their fill. 

We encourage your guests to come check out the process of us cooking the pizzas. The oven is very unique and most people are curious about how it all works. We love questions and do our best to answer them; however, at the peak of service we may be too busy keeping pizza coming.

We continue to cook pizza until it has become obvious that your guests have had their fill or until we run out. We only bring enough dough to make ¾ of a 12” pizza per person. For example, for every 100 people, we will make 75 12” pizzas or about 4-5 slices per person.

Please make sure you have an accurate guest count. If you ordered the “late night snacks” add-on, we include an additional 10 pizzas regardless of guest count.


BREAKDOWN

After service is complete, we begin breaking down our equipment. We require the ability to access the oven with our truck within one hour of the end of service. Please keep this in mind when deciding where you will locate our cooking area. If this does not work with your space or timeline, we stay on site as long as necessary for an additional $100 an hour fee.

INCLEMENT WEATHER

We continue to service in light rain; however, in the event of heavy rain, we need to discontinue service until the weather subsides. If the weather is too extreme to allow us to cook on site, then we prepare a suitable alternative from our restaurant in Augusta and transport it to the event. These options are discussed on a case-by-case basis.

FINAL PAYMENT

Final payment is due on or before the day of your event. Please have someone available to handle the payment. The final payment due will reflect any changes made to guest count and event details that were made after the initial proposal.
